Position Summary:

As a key member of the Campus Dining Team, the Supervisor is responsible for assisting in the leadership and oversight of food preparation and service, assisting with culinary tasks, interacting with customers and supporting the management team in all personnel matters. This position has primary responsibilities for all operational aspects of a quality dining program and for providing maximum customer satisfaction to students, Head of Houses, faculty and University guests. This position plays a large role in the ability to maintain positive relationships which influence a positive team environment.

Vanderbilt Campus Dining takes pride in the culinary creations served from our kitchens. Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have 4 main dining centers, 10 restaurants and cafes, 6 convenience stores, and we employ over 300 employees.

Key Functions and Expected Performance:

  • Provide leadership anddirection to a diverse team of unionized, non-exempt workforce. Promoteand maintain a positive and collaborative working environment thatpromotes open communication, consistency, fairness and opportunities forcontinuous learning while achieving the vision and mission of CampusDining.

  • Provide timely feedback and encourage two-way communicationby checking in with team members on every shift

  • Assist with job bidding, schedule timely interviews andencourage growth

  • Complete performance evaluations for team members

  • Ensure performanceexpectations and work rules are clearly communicated and implemented viaregular coaching, mentoring and regular line-up meetings.

  • Review handbook guidelines with all new hires

  • Maintain a safe work environment by enforcing all safetystandards

  • Plan ahead to best communicate line-up topics

  • Supports progressive discipline: verbal,written, termination, reviews all disciplinary actions with management beforeadministering

  • Ensure uniform compliance and professionalappearance of staff members

  • Serve a link between staff and upper managementto communicate concerns and ideas.

  • Monitorpayroll for both unionized and student employees.

  • Review staffing to ensure scheduled labor is ontarget

  • Review time cards on a daily basis to ensureaccuracy of punch times

  • Administer schedule updates and edits

  • Input pay rules such a PTO, Sick and Holiday

  • Ensures 30 minute breaks for all staff members

  • Assist Manager and Chef/Sous Chef in overseeingthe entry of accurate information on production sheets by team members atassigned station(s)

  • In conjunction with Chef, review productionsheets with team members to ensure accurate results are recorded at assignedstation(s)

  • Help oversee portion control based on recipes atassigned station(s), menu rotations and special events

  • Oversee the cooking and preparation of fooditems for the day according to recipe packets

  • Responsible for making sure staff properlydispose and record waste

  • Ensure food is properly dated and labeled incoolers and storage areas

  • Work Stations

  • Oversee the setting up and breaking down of workstations

  • Oversee the sanitation of work stationsincluding floor care, worktables, walls, refrigerators, equipment and utensils

  • Ensure each station has the equipment andsupplies needed to serve customers

  • Ensure staff complete daily temperature logs

  • Cash Management: Possesses sufficientfundamental proficiency to successfully demonstrate cash drawer management inpractical applications of moderate difficulty.

  • Knowledgeable of basic cash flow, accountspayable, accounts receivable and credit management.

  • Reconcile cash sales and perform safe audits

  • Monitor all financial transactions and complete DailyDeposit Work Sheets (DDWS)

  • Pointof Sale (POS): Possesses sufficient fundamental proficiency tosuccessfully demonstrate Point Of Sale operations in practical applications ofmoderate difficulty.

  • Constantly review menu boards, signage andwebsite postings to ensure accuracy of published menus

  • Ensure menu rotation to set-up correctly inpoint of sale system.

Supervisory Relationships :

This position does have direct supervisory responsibility over hourly food service employees; this position reports administratively and functionally to the unit manager.

Experience and Education :

This position requires a high school diploma. An Associate’s degree is preferred. A minimum of 36 months of food service management experience is required.
