As a key member of the Campus Dining Team, the Manager is responsible for assisting in the leadership and oversight of menu management processes and procedures, labor management, providing direction to hourly team members, interacting with customers, and supporting the management team in all personnel matters. This position has primary responsibilities for all operational aspects of a quality dining program and for providing maximum customer satisfaction to students, faculty, staff and University guests. This position plays a large role in the ability to maintain positive relationships which influence a positive team environment.

Vanderbilt Campus Dining takes pride in the culinary creations served from our kitchens. Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have 4 main dining centers, 10 restaurants and cafes, 5 convenience stores, and we employ over 350 employees.

Duties andResponsibilities

Provide leadership and direction to a diverse team of unionized, non-exempt workforce. Promote and maintain a positive and collaborative working environment that promotes open communication, consistency, fairness and opportunities for continuous learning while achieving the vision and mission of Campus Dining.

  • Provide timelyfeedback and encourage two-way communication by leading/participating inline ups and checking in with team members throughout their shift

  • Assist withjob bidding, schedule timely interviews and encourage growth for hourlyteam members

  • Work withmanagement team to complete performance evaluations for team members

Assist, manage, and supervise the menu management system, processes, and procedures

  • Provide guidance, direction,coaching, and management of Fusion recipes and production sheets with teammembers to ensure accurate results are recorded at assigned station(s)

  • Provide feedback to ExecutiveChef and Operational Excellence group about accuracy of recipes andforecasts

  • Help oversee portion controlbased on Fusion recipes and production sheets at assigned station(s),

  • Provide support for the cookingand preparation of food items for the day as needed

  • Responsible for making surestaff properly handles waste by recording through Lean Path and disposingthrough compost waste stream

  • Ensure food is properly datedand labeled in coolers and storage areas

Work Station Supervision:

  • Oversee the setting up andbreaking down of work stations

  • Oversee the sanitation of workstations including floor care, worktables, walls, refrigerators, equipmentand utensils

  • Ensure each station has theequipment and supplies needed to serve customers

  • Ensure staff complete dailytemperature logs and cleaning lists

  • Be able to adapt operationalstandards across diverse food service operations

Ensure performance expectations and work rules are clearly communicated and implemented via regular coaching, mentoring and regular line-up meetings.

  • Reviewhandbook guidelines with all new hires

  • Maintain asafe work environment by enforcing all safety standards

  • Plan ahead tobest manage and communicate information at line-ups. Support progressive discipline: verbal, written,termination, reviews all disciplinary actions with management beforeadministering

  • Ensure uniform compliance andprofessional appearance of staff members

  • Serve as link between staff andupper management to communicate concerns and ideas

Administrative & Financial Management:

  • Work closelywith operational excellence team to create labor schedules to ensurebest labor management practices are implemented

  • Approveshourly labor using Oracle time management system, ensures leave managementrequests like PTO are entered and approved on a weekly basis.

  • Must be ableto work off of a Calendar and be proactive when communicating andscheduling

Cash Management: Possesses sufficient fundamental proficiency to successfully demonstrate cash drawer management in practical applications of moderate difficulty

  • Knowledgeable of basic cashflow, accounts payable, accounts receivable and credit management

  • Reconcile cash sales andperform safe audits

  • Monitor all financialtransactions and complete Daily Deposit Work Sheets (DDWS)

Point of Sale (POS): Possesses sufficient fundamental proficiency to successfully demonstrate Point Of Sale operations in practical applications of moderate difficulty

  • Constantlyreview menu boards, signage and website postings to ensure accuracy ofpublished menus to menu served

This position has direct supervisory responsibility over hourly food service employees; this position reports administratively and functionally to the General Manager (or other position, depending on location)

Profile of an IdealCandidate

  • This position requires ahigh school diploma. An Associate’s degree is preferred.

  • A minimum of 48 monthsof food service management experience is required.

  • Communication: excellentwritten and oral communication skills

  • Good organization skills and aneye for detail

  • Computer skills: email,Microsoft word, Outlook, databases, systems, etc.

  • Ability to manage people andhave accountability for Vanderbilt assets
