Senior Cook Summary:

The Senior Cook assists the Unit Chef and Sous Chef in a variety of culinary tasks. This position is responsible for the daily kitchen operation in a high paced, high volume kitchen environment. The Senior Cook supports the culinary leadership in the execution of kitchen management, menu management, catering and special events. Responsibilities will include delegation of work duties, complex cooking, ordering, inventory, cleaning and all duties associated with operating a successful kitchen.

Minimum Requirements:

  • Ability to read Vanderbilt Campus Dining documents with or without accommodations

  • Complex recipe execution to include advanced culinary language, techniques and ingredient identification

  • Advanced knife skills (responsible for cutting proteins)

  • ServSafe Manager certification within 30 days of hire

  • AllerTrain U certification within 30 days of hire

  • Comfortable delegating complex tasks

  • Monitor proper daily production and unit documentation

  • Provide daily production and staffing updates to direct report or supervisor on duty

Daily Job Duties May Include:

  • Follow written production sheets and recipes

  • Complete production and waste sheets as assigned

  • Identify production needs based on unit/area recipes and pars

  • Take part in maintaining accurate inventory levels which may include ordering and receiving products

  • When called upon, assist in taking monthly inventory of food, paper items and chemicals, which includes knowledge of Campus Dining’s menu management system.

  • Identify product needs based on forecasted guest counts and menu rotations

  • Plan sequence and time of cooking operations to meet meal-serving hours.

  • Taste foods to determine their quality, texture, consistency, and taste.

Customer Service:

  • Lead by example and follow customer service standards outlined in the employee handbook.

  • Works in a team-driven environment, takes direction, delegates tasks and assists with problem-solving

  • Understands Vanderbilt Campus Dining Meal Plans and has the ability to explain the guidelines of the plan to customers

Safety and Sanitation:

  • Maintains quality, safety and sanitary standards of State and City Health Departments and Vanderbilt Campus Dining codes

  • Maintains clean and orderly work area and complete other general cleaning duties

  • Reports to management any safety hazards and equipment in need of repair
