Reporting to the General Manager or Assistant Director, the Chef provides oversight of the food operation within Vanderbilt Campus Dining. This position has primary responsibility for all operational aspects of a quality dining program, and for providing maximum customer satisfaction to students, University personnel, faculty, and University guests.

Vanderbilt Campus Dining takes pride in the culinary creations served from our kitchens. Our Dining program is highly decorated, the winner of many prestigious awards in the food service industry, including Best On-Site Food Service Operation in the Nation, Best Food Service Operator, the prestigious Ivy Award, and many more. We have 4 main dining centers, 10 restaurants and cafes, 6 convenience stores, and we employ over 300 employees.

Successfulcandidates will possess the following:

  • HS Diplomaor equivalent and specialized training in Culinary Arts.

  • 5 years ofrelated culinary management and experience in developing a quality foodprogram in a restaurant or hospitality environment.

  • Proficiencyin Microsoft Office applications (Word, Outlook, Excel).

  • A passionfor food and knowledge of current food trends.

  • Strongrecord of business judgment including financial and human resourcemanagement.

  • Demonstratedability to deliver exceptional customer service.

  • Strongcommunication (verbal, written, interpersonal) skills and an ability tocommunicate effectively with a diverse population.

  • Strong timemanagement, organizational and multi-tasking skills.

  • Ability tomeet multiple deadlines and manage competing priorities.

  • Goodprofessional judgment and ability to independently make sound businessdecisions.

  • Must beadaptable to a frequently changing environment and ability to remain calmin stressful situations.

  • Worksprofessionally, ethically and with integrity; upholds the vision andmission of Vanderbilt Campus Dining

  • Operationalknowledge of industrial kitchen equipment (dishwasher, oven, ventilationsystems, etc.).

  • Operationalexperience with a variety of food service applications and computerizedmenu management systems. Ability to learn and adapt to new systems andapplications as needed.

  • ServSafe Manager certification within 30days of hire

  • AllerTrain U certification within 30 daysof hire

Key Functions andExpected Performance:

Leadership

  • Provide leadership and direction to a diverse team of unionized,non-exempt workforce. Promote and maintain a positive and collaborativeworking environment that promotes open communication, consistency,fairness and opportunities for continuous learning while achieving thevision and mission of Campus Dining.

  • Providetimely feedback and encourage two-way communication by checking in with teammembers on every shift

  • Assistwith job bidding, schedule timely interviews and encourage growth

  • Completeperformance evaluations for team member

Culinary Management:

  • Orderfood, beverage, dry goods and other supplies, while maintaining unit budgetaryguidelines.

  • Generateproduction sheets and direct the flow of products and labor throughout the workday

  • Manage, train and evaluate assigned culinary/kitchen staff

  • Menuwriting, development and planning

  • Ensure the proper storage of food and supplies

  • Complete a monthly inventory of goods and assist the chef inmonitoring food cost

  • Encouragescreative approaches to improved financial viability including cost reductioninitiatives and other related efforts.

Menu Management Systems:

  • Manage the entry of accurate informationon production sheets by team members at assigned station(s)

  • Review production sheets with team members toensure accurate results are recorded at assigned station(s)

  • Oversee portion control based on recipes atassigned station(s), menu rotations and special events

  • Oversee the cooking and preparation of fooditems for the day according to recipe packets

  • Responsible for making sure staff properlydispose and record waste

  • Ensure food is properly dated and labeled incoolers and storage areas

Work Stations:

  • Oversee the setting up and breaking down ofwork stations

  • Oversee the sanitation of work stationsincluding floor care, worktables, walls, refrigerators, equipment and utensils

  • Ensure each station has the equipment and suppliesneeded to serve customers

  • Ensure staff complete daily temperature logs

Supervisory Relationships:

This position has direct supervisory responsibility over hourly food service employees; this position reports administratively and functionally to the General Manager or Assistant Director.

This is a full-time position. Evenings and weekends are required for this position and the hours and days will vary based on the location needs.
